Berry Chia Seed Pudding
Ingredients
- 4 tablespoons chia seeds
- 1 cup unsweetened almond milk, coconut milk or whole milk
- 1 cup fresh or frozen berries chopped
- 1 tablespoon sweetener (monkfruit, allulose, stevia, or raw honey) (adjust to taste)
- 1/2 teaspoon vanilla extract
- 1 scoop of plain or vanilla protein powder (optional)
Instructions
In a blender or food processor, blend the berries until smooth. In a bowl, combine the chia seeds, milk, blended berries, sweetener, and vanilla extract. Stir well to combine. Let the mixture sit for about 15 minutes to allow the chia seeds to absorb some of the liquid. Stir the chia seed mixture again to break up any clumps and ensure they are evenly distributed. You may want to stir a few times to make sure the chia seeds are mixed well. Transfer the thickened pudding to dessert cups or small mason jars. Cover. Refrigerate the chia seed pudding for at least 2 hours or overnight to allow it to thicken and set.
