Grain Free Nut Butter Granola

Grain Free Nut Butter Granola

Ingredients

  •  3 cups mixture of raw nuts-almonds, walnuts, pecans, hazelnuts etc
  •  1 cup shredded unsweetened coconut OR almond flour
  •  1/2 cup pumpkin or sunflower seeds
  •  1/3 cup granulated sweetener (allulose, monkfruit, or stevia)
  •  1/3 cup vanilla (or other flavors) protein powder (add extra coconut or almond fl our or collagen powder if you don’t have protein powder)
  •  1/3 cup unsweetened nut butter (peanut, almond, or seed butter)
  •  1/4 cup butter (use coconut oil for dairy-free)
  •  1/4 cup water
  •  1 tsp salt (pink, gray, or sea salt)

Instructions

1. Preheat the oven to 300ºF and line a large rimmed baking sheet with parchment paper.

2. In a food processor, process the nuts until they resemble coarse crumbs with some larger pieces. Mix in shredded coconut (or almond fl our) and seeds. Transfer to a large bowl and stir in the sweetener, and vanilla protein powder.

3. Melt the nut butter and butter together. Pour the melted nut butter mixture over the nut mixture and stir well, tossing lightly. Stir in the water - at this point, the mixture should begin to clump together.

4. Spread the mixture out evenly on the prepared baking sheet and press it down firmly with your hands. Bake 30 minutes, stirring halfway through and re-pressing it down. Sprinkle with salt. Remove and let cool completely.

5. Break up any large clumps with your hands. Storage Information: Store on the counter in an airtight container for up to 2 weeks. You can also store it in the fridge or freezer. I double the mixture and freeze in wide mouth pint mason jars.
